Ingredients

  • 2 medium sweet potatoes, diced
  • 1 tablespoon olive oil

  • 1/2 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1/2 cup diced onion
  • 2 eggs
  • 1/4 cup chopped fresh parsley

Instructions

  1. In a skillet, heat olive oil over medium heat.
  2. Add diced sweet potatoes, salt, and pepper. Cook until tender, about 10 minutes.
  3. Add onion and cook until softened.
  4. Stir in cooked barley and smoked paprika. Cook until heated through.
  5. Make two wells in the mixture and crack an egg into each well. Cover and cook until the eggs are set.
  6. Garnish with parsley before serving.
