Ingredients

- 1 cup cooked barley
- 2 medium sweet potatoes, diced
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon smoked paprika
- 1/2 cup diced onion
- 2 eggs
- 1/4 cup chopped fresh parsley
Instructions
- In a skillet, heat olive oil over medium heat.
- Add diced sweet potatoes, salt, and pepper. Cook until tender, about 10 minutes.
- Add onion and cook until softened.
- Stir in cooked barley and smoked paprika. Cook until heated through.
- Make two wells in the mixture and crack an egg into each well. Cover and cook until the eggs are set.
- Garnish with parsley before serving.
Notes
- For a vegetarian option, omit the eggs or use a substitute.
- This dish can be made ahead and reheated for a quick breakfast.
