- 2 cups almond flour
- 1/2 cup coconut flour
- 1/2 cup erythritol
- 4 large eggs
- 1/4 cup unsweetened almond milk
- 2 teaspoons baking powder
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/4 cup unsalted butter, melted
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
- In a large bowl, mix the almond flour, coconut flour, erythritol, baking powder, ground cinnamon, and salt.
- In another bowl, whisk together the eggs, almond milk, melted butter, and vanilla extract.
- Combine the wet ingredients with the dry ingredients until well mixed.
- Pour the batter into the prepared loaf pan and spread evenly.
- Bake for 45-50 minutes or until a toothpick comes out clean.
- Allow to cool for 10 minutes before removing from the pan to cool completely on a wire rack.
