Description

A delicious low-carb casserole with ground beef and zucchini that is both easy to prepare and satisfying.


Ingredients

  • 1 pound ground beef
  • 3 medium zucchini, sliced
  • 1 can (14.5 ounces) diced tomatoes
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon olive oil
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat the olive oil over medium heat and add the ground beef. Cook until browned.
  3. Stir in sliced zucchini, diced tomatoes, garlic powder, onion powder, oregano, salt, and pepper. Cook for an additional 5 minutes.
  4. Transfer the mixture to a baking dish and top with mozzarella and Parmesan cheese.
  5. Bake in the preheated oven for 20-25 minutes until the cheese is bubbly and golden.

  • For added flavor, try adding Italian seasoning or crushed red pepper flakes.
