Description

This Gluten-Free Quinoa Salad is a delicious and healthy dish packed with nutrients.


Ingredients

Scale
  • 1 cup quinoa
  • 2 cups water
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup red onion, diced
  • 1/4 cup bell pepper, diced
  • 1/4 cup parsley, chopped
  • 1/4 cup feta cheese (optional)
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water.
  2. In a medium pot, combine quinoa and water. Bring to a boil.
  3. Reduce heat, cover, and simmer for 15 minutes until water is absorbed.
  4. Remove from heat and let sit covered for 5 minutes. Fluff with a fork.
  5. In a large bowl, combine the cooled quinoa with vegetables and feta cheese.
  6. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper. Pour over salad and toss to combine.
  7. Serve chilled or at room temperature.

  • Can be made ahead of time and stored in the fridge for up to 3 days.
