This Gluten-Free Quinoa Salad is a delicious and healthy dish packed with nutrients.
Ingredients

- 1 cup quinoa
- 2 cups water
- 1/2 cup cherry tomatoes, halved
- 1/2 cup cucumber, diced
- 1/4 cup red onion, diced
- 1/4 cup bell pepper, diced
- 1/4 cup parsley, chopped
- 1/4 cup feta cheese (optional)
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions
- Rinse quinoa under cold water.
- In a medium pot, combine quinoa and water. Bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes until water is absorbed.
- Remove from heat and let sit covered for 5 minutes. Fluff with a fork.
- In a large bowl, combine the cooled quinoa with vegetables and feta cheese.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper. Pour over salad and toss to combine.
- Serve chilled or at room temperature.
Notes
- Can be made ahead of time and stored in the fridge for up to 3 days.
- Substitute vegetables as desired.
