Description

A classic French Onion Soup made with caramelized onions, beef broth, and topped with melted cheese.


Ingredients

  • 4 large onions, sliced
  • 4 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon sugar
  • 2 cloves garlic, minced
  • 8 cups beef broth
  • 1 cup dry white wine
  • 8 slices French bread
  • 2 cups shredded Gruyère cheese

Instructions

  1. In a large pot, melt butter and olive oil over medium heat.
  2. Add the sliced onions, salt, and sugar. Cook, stirring frequently, until the onions are caramelized (about 30 minutes).
  3. Add the garlic and cook for an additional minute.
  4. Pour in the beef broth and white wine, bringing the mixture to a simmer. Cook for 20 minutes.
  5. Meanwhile, preheat the broiler.
  6. Distribute the soup into oven-safe bowls, place a slice of French bread on top of each bowl, and cover with shredded cheese.
  7. Broil the bowls until the cheese is melted and bubbly.
  8. Serve hot, garnished with fresh herbs if desired.
