- 1 cup diced onions
- 2 cloves garlic, minced
- 3 carrots, sliced
- 2 celery stalks, diced
- 8 cups chicken broth
- 1 cup orzo pasta
- 1/4 cup fresh lemon juice
- 1 tablespoon lemon zest
- Salt to taste
- Pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, heat olive oil over medium heat. Add the chicken and brown on both sides.
- Add onions, garlic, carrots, and celery, cooking until softened.
- Pour in the chicken broth and bring to a simmer.
- Add the orzo pasta and cook until al dente.
- Stir in lemon juice and lemon zest. Season with salt and pepper.
- Serve garnished with fresh parsley.
