- 1 tablespoon olive oil
- 1 pound boneless, skinless chicken breast
- 1 medium onion, chopped
- 2 carrots, sliced
- 2 celery stalks, sliced
- 4 cloves garlic, minced
- 8 cups chicken broth
- 1 cup orzo pasta
- 1 teaspoon dried thyme
- 1/4 cup fresh lemon juice
- 2 cups baby spinach
- Salt and pepper to taste
Instructions
- In a large pot, heat olive oil over medium heat. Add chicken and cook until browned, then remove and set aside.
- In the same pot, add onion, carrots, and celery. Sauté until softened.
- Add garlic and cook for another minute.
- Pour in the chicken broth and bring to a boil.
- Add the orzo, thyme, and cooked chicken; simmer until orzo is tender.
- Stir in the lemon juice and spinach. Cook until spinach is wilted.
- Season with salt and pepper to taste. Serve warm.

- For a creamier version, add a splash of cream.
