Description

This Easy Lemon Chicken Orzo Soup is a light and comforting dish, perfect for a cozy meal.


Ingredients

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breast
  • 1 medium onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 4 cloves garlic, minced
  • 8 cups chicken broth
  • 1 cup orzo pasta
  • 1 teaspoon dried thyme
  • 1/4 cup fresh lemon juice
  • 2 cups baby spinach
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chicken and cook until browned, then remove and set aside.
  2. In the same pot, add onion, carrots, and celery. Sauté until softened.
  3. Add garlic and cook for another minute.
  4. Pour in the chicken broth and bring to a boil.
  5. Add the orzo, thyme, and cooked chicken; simmer until orzo is tender.
  6. Stir in the lemon juice and spinach. Cook until spinach is wilted.
  7. Season with salt and pepper to taste. Serve warm.
