Description
A hearty and comforting soup filled with the flavors of stuffed peppers, made easily in a crockpot.
Ingredients

- 1 pound ground beef
- 1 cup diced onions
- 1 cup diced green bell peppers
- 2 cloves garlic, minced
- 1 can (28 oz) diced tomatoes
- 1 can (15 oz) tomato sauce
- 2 cups beef broth
- 1 teaspoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup cooked rice
- 1 cup shredded cheese (optional)
Instructions
- In a skillet, brown the ground beef over medium heat and drain excess fat.
- Add onions, green bell peppers, and garlic. Cook until the vegetables are tender.
- Transfer the mixture to the crockpot.
- Add diced tomatoes, tomato sauce, beef broth, Italian seasoning, salt, and pepper. Stir to combine.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- About 30 minutes before serving, stir in the cooked rice. If using cheese, add it during the last 10 minutes of cooking.
- Serve hot and enjoy!

- This soup can be frozen for up to 3 months.
