Description

A hearty and comforting soup filled with the flavors of stuffed peppers, made easily in a crockpot.


Ingredients

  • 1 pound ground beef
  • 1 cup diced onions
  • 1 cup diced green bell peppers
  • 2 cloves garlic, minced
  • 1 can (28 oz) diced tomatoes
  • 1 can (15 oz) tomato sauce
  • 2 cups beef broth
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup cooked rice
  • 1 cup shredded cheese (optional)

Instructions

  1. In a skillet, brown the ground beef over medium heat and drain excess fat.
  2. Add onions, green bell peppers, and garlic. Cook until the vegetables are tender.
  3. Transfer the mixture to the crockpot.
  4. Add diced tomatoes, tomato sauce, beef broth, Italian seasoning, salt, and pepper. Stir to combine.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  6. About 30 minutes before serving, stir in the cooked rice. If using cheese, add it during the last 10 minutes of cooking.
  7. Serve hot and enjoy!
