Description

Deliciously crispy zucchini fries coated in parmesan and baked to perfection.


Ingredients

Scale
  • 2 medium zucchini, cut into fries
  • 1 cup panko breadcrumbs
  • 1/2 cup grated parmesan cheese
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • salt to taste
  • pepper to taste

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Line a baking sheet with parchment paper.
  3. In a bowl, combine panko breadcrumbs, parmesan cheese, garlic powder, onion powder, paprika, salt, and pepper.
  4. In another bowl, beat the eggs.
  5. Dip each zucchini fry into the eggs, then coat with the breadcrumb mixture.
  6. Place the coated fries onto the baking sheet in a single layer.
  7. Bake for 20-25 minutes or until golden and crispy.
  8. Serve warm with your favorite dipping sauce.
