- 2 medium zucchini, cut into fries
- 1 cup panko breadcrumbs
- 1/2 cup grated parmesan cheese
- 2 large eggs
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- salt to taste
- pepper to taste
Instructions
- Preheat oven to 425°F (220°C).
- Line a baking sheet with parchment paper.
- In a bowl, combine panko breadcrumbs, parmesan cheese, garlic powder, onion powder, paprika, salt, and pepper.
- In another bowl, beat the eggs.
- Dip each zucchini fry into the eggs, then coat with the breadcrumb mixture.
- Place the coated fries onto the baking sheet in a single layer.
- Bake for 20-25 minutes or until golden and crispy.
- Serve warm with your favorite dipping sauce.
Notes
- For extra crispiness, spray the fries with cooking spray before baking.
- You can use other seasonings based on your preference.
