Ingredients

- 2 cups heavy cream
- 1 cup dark chocolate, chopped
- 3 large eggs, separated
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- Melt the chocolate in a heatproof bowl over simmering water, stirring until smooth. Remove from heat and let cool slightly.
- In a separate bowl, beat the egg whites until soft peaks form, then gradually add the sugar and continue beating until stiff peaks form.
- In another bowl, whip the heavy cream until stiff peaks form.
- Fold the egg yolks into the melted chocolate, then gently fold in the whipped cream.
- Finally, fold in the egg whites in two additions until just combined.
- Spoon the mousse into serving dishes and refrigerate for at least 2 hours before serving.
Notes
- For a lighter texture, you can fold in some whipped egg whites.
- Make sure the chocolate is not too hot when folding in the whipped cream.
