Ingredients

Scale
  • 2 cups heavy cream

  • 3 large eggs, separated
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Melt the chocolate in a heatproof bowl over simmering water, stirring until smooth. Remove from heat and let cool slightly.
  2. In a separate bowl, beat the egg whites until soft peaks form, then gradually add the sugar and continue beating until stiff peaks form.
  3. In another bowl, whip the heavy cream until stiff peaks form.
  4. Fold the egg yolks into the melted chocolate, then gently fold in the whipped cream.
  5. Finally, fold in the egg whites in two additions until just combined.
  6. Spoon the mousse into serving dishes and refrigerate for at least 2 hours before serving.

Notes

  • For a lighter texture, you can fold in some whipped egg whites.
  • Make sure the chocolate is not too hot when folding in the whipped cream.
