Description

A rich and creamy mac and cheese made with cauliflower, perfect for a comforting meal.


Ingredients

  • 1 medium head of cauliflower
  • 8 ounces elbow macaroni
  • 2 cups shredded sharp cheddar cheese
  • 1 cup milk
  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large pot, bring salted water to a boil and cook the macaroni until al dente.
  3. Meanwhile, cut the cauliflower into florets and steam until tender.
  4. In a saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1 minute.
  5. Gradually add the milk, whisking continuously until the mixture thickens.
  6. Stir in the cheese until melted and smooth.
  7. Add the garlic powder, onion powder, salt, pepper, and paprika, and mix well.
  8. Combine the macaroni and cauliflower and pour the cheese sauce over it, stirring until well coated.
  9. Transfer to a baking dish and bake for 25-30 minutes until bubbly and golden on top.

Notes

  • Feel free to add breadcrumbs on top for extra crunch!
  • This dish can be made ahead and reheated.
