A rich and creamy mac and cheese made with cauliflower, perfect for a comforting meal.
Ingredients

- 1 medium head of cauliflower
- 8 ounces elbow macaroni
- 2 cups shredded sharp cheddar cheese
- 1 cup milk
- 1/4 cup butter
- 1/4 cup all-purpose flour
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon paprika
Instructions
- Preheat the oven to 350°F (175°C).
- In a large pot, bring salted water to a boil and cook the macaroni until al dente.
- Meanwhile, cut the cauliflower into florets and steam until tender.
- In a saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1 minute.
- Gradually add the milk, whisking continuously until the mixture thickens.
- Stir in the cheese until melted and smooth.
- Add the garlic powder, onion powder, salt, pepper, and paprika, and mix well.
- Combine the macaroni and cauliflower and pour the cheese sauce over it, stirring until well coated.
- Transfer to a baking dish and bake for 25-30 minutes until bubbly and golden on top.
Notes
- Feel free to add breadcrumbs on top for extra crunch!
- This dish can be made ahead and reheated.
