Description

Deliciously soft ginger cookies filled with gooey caramel, perfect for the holidays or any special occasion.


Ingredients

  • 2 1/4 cups all-purpose flour
  • 2 teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cloves
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 tablespoon unsulfured molasses
  • 1/4 cup caramel candies

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a mixing bowl, whisk together flour, ginger, cinnamon, cloves, baking soda, and salt.
  3. In another bowl, cream the butter and sugars until light and fluffy.
  4. Add the egg and molasses, mixing until combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing well.
  6. Form dough into balls, place a caramel candy inside each ball, and seal the dough around the candy.
  7. Place on a baking sheet lined with parchment paper.
  8. Bake for 10-12 minutes until edges are golden.
  9. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

  • For a spicier cookie, increase the amount of ginger.
