- 2 1/4 cups all-purpose flour
- 2 teaspoons ground ginger
- 1 teaspoon ground cinnamon
- 1 teaspoon ground cloves
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 3/4 cup unsalted butter, softened
- 1 cup brown sugar, packed
- 1/4 cup granulated sugar
- 1 large egg
- 1 tablespoon unsulfured molasses
- 1/4 cup caramel candies
Instructions
- Preheat oven to 350°F (175°C).
- In a mixing bowl, whisk together flour, ginger, cinnamon, cloves, baking soda, and salt.
- In another bowl, cream the butter and sugars until light and fluffy.
- Add the egg and molasses, mixing until combined.
- Gradually add the dry ingredients to the wet ingredients, mixing well.
- Form dough into balls, place a caramel candy inside each ball, and seal the dough around the candy.
- Place on a baking sheet lined with parchment paper.
- Bake for 10-12 minutes until edges are golden.
- Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
- For a spicier cookie, increase the amount of ginger.
- Store cookies in an airtight container to maintain their softness.
