Ingredients

- 2 pounds beef chuck, cut into cubes
- 3 cups beef broth
- 2 carrots, chopped
- 1 onion, diced
- 3 cloves garlic, minced
- 2 tablespoons tomato paste
- 2 teaspoons dried thyme
- 2 cups potatoes, peeled and diced
- 1 cup peas
- 2 tablespoons olive oil
- salt to taste
- pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add beef and brown on all sides.
- Add onion and garlic; sauté until onion is translucent.
- Stir in carrots, tomato paste, thyme, salt, and pepper.
- Pour in beef broth and bring to a boil. Reduce heat to low and simmer for 1.5 hours.
- Add potatoes and simmer for an additional 30 minutes, or until potatoes are tender.
- Stir in peas during the last 5 minutes of cooking.

- This stew can be made a day ahead; the flavors will deepen.
- Serve with crusty bread for a complete meal.
