Description

A hearty beef stew topped with creamy potatoes, perfect for a comforting dinner.


Ingredients

  • 2 pounds beef chuck, cut into cubes
  • 3 cups beef broth
  • 2 carrots, chopped
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 2 teaspoons dried thyme
  • 2 cups potatoes, peeled and diced
  • 1 cup peas
  • 2 tablespoons olive oil
  • salt to taste
  • pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add beef and brown on all sides.
  2. Add onion and garlic; sauté until onion is translucent.
  3. Stir in carrots, tomato paste, thyme, salt, and pepper.
  4. Pour in beef broth and bring to a boil. Reduce heat to low and simmer for 1.5 hours.
  5. Add potatoes and simmer for an additional 30 minutes, or until potatoes are tender.
  6. Stir in peas during the last 5 minutes of cooking.

Notes

  • This stew can be made a day ahead; the flavors will deepen.
