A rich and flavorful beef curry made with tender chunks of beef simmered in creamy coconut milk and aromatic spices.

- 2 pounds beef chuck, cut into cubes
- 1 can (14 ounces) coconut milk
- 2 tablespoons curry powder
- 1 teaspoon turmeric
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 tablespoon ginger, minced
- 2 cups beef broth
- 2 tablespoons vegetable oil
- 1 tablespoon fish sauce
- 1 tablespoon brown sugar
- 1 lime, juiced
- salt to taste
- fresh cilantro for garnish
Instructions
- In a large pot, heat vegetable oil over medium heat. Add onions, garlic, and ginger, and sauté until fragrant.
- Add the beef cubes and brown on all sides.
- Stir in curry powder, turmeric, fish sauce, and brown sugar, and cook for another 2 minutes.
- Pour in the beef broth and bring to a boil.
- Reduce heat to low, cover, and simmer for 1.5 to 2 hours until the beef is tender.
- Add coconut milk and lime juice, simmer for another 10 minutes.
- Season with salt to taste, and serve hot, garnished with fresh cilantro.

- This dish pairs well with rice or naan.
- You can adjust the spiciness by adding chili peppers.
