Description

A rich and flavorful beef curry made with tender chunks of beef simmered in creamy coconut milk and aromatic spices.


Ingredients

  • 2 pounds beef chuck, cut into cubes
  • 1 can (14 ounces) coconut milk
  • 2 tablespoons curry powder
  • 1 teaspoon turmeric
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 cups beef broth
  • 2 tablespoons vegetable oil
  • 1 tablespoon fish sauce
  • 1 tablespoon brown sugar
  • 1 lime, juiced
  • salt to taste
  • fresh cilantro for garnish

Instructions

  1. In a large pot, heat vegetable oil over medium heat. Add onions, garlic, and ginger, and sauté until fragrant.
  2. Add the beef cubes and brown on all sides.
  3. Stir in curry powder, turmeric, fish sauce, and brown sugar, and cook for another 2 minutes.
  4. Pour in the beef broth and bring to a boil.
  5. Reduce heat to low, cover, and simmer for 1.5 to 2 hours until the beef is tender.
  6. Add coconut milk and lime juice, simmer for another 10 minutes.
  7. Season with salt to taste, and serve hot, garnished with fresh cilantro.
