Ingredients

- 2 slices whole grain bread
- 1 ripe avocado
- 2 large eggs
- 1 tablespoon lemon juice
- Salt to taste
- Pepper to taste

Instructions
- Toast the bread slices until golden brown.
- In a bowl, mash the avocado and mix in lemon juice, salt, and pepper.
- Bring a pot of water to a simmer. Crack the eggs into the water and poach for about 3-4 minutes until the whites are set.
- Spread the mashed avocado on the toasted bread.
- Top each slice with a poached egg.
- Sprinkle with additional salt, pepper, and optional toppings.
- Serve immediately.
